  • 2 cups cooked shredded chicken
  • 12-15 corn tortillas
  • 3 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Salt and black pepper to taste

Method
 

  1. In a mixing bowl, combine the shredded chicken, cumin, chili powder, salt, pepper, and half of the cheese until well incorporated.
  2. Warm the corn tortillas in a dry skillet or microwave until they are pliable enough to roll without cracking.
  3. Place two tablespoons of the chicken mixture onto the lower third of each warm tortilla.
  4. Roll each tortilla tightly into a thin cylinder shape and place seam-side down on a plate.
  5. Heat the vegetable oil in a large skillet over medium-high heat until it shimmers.
  6. Place the taquitos into the skillet seam-side down to seal the edges.
  7. Cook for approximately three minutes per side or until golden brown and crispy.

Notes

Ensure the tortillas are warm before rolling to prevent tearing. For best results, place the seam-side down in the hot skillet to ensure they stay closed during cooking. Leftover chicken is perfect for this recipe.
