- Warm the corn tortillas in a dry skillet or microwave until they are pliable enough to roll without cracking.
- Place two tablespoons of the chicken mixture onto the lower third of each warm tortilla.
- Roll each tortilla tightly into a thin cylinder shape and place seam-side down on a plate.
- Heat the vegetable oil in a large skillet over medium-high heat until it shimmers.
- Place the taquitos into the skillet seam-side down to seal the edges.
- Cook for approximately three minutes per side or until golden brown and crispy.
Notes
Ensure the tortillas are warm before rolling to prevent tearing. For best results, place the seam-side down in the hot skillet to ensure they stay closed during cooking. Leftover chicken is perfect for this recipe.
