  • 4 boneless, skinless chicken breast halves
  • 1 cup panko bread crumbs
  • 3/4 cup freshly grated parmesan cheese
  • 2 large eggs, beaten
  • 1/2 cup prepared tomato sauce
  • 1/4 cup mozzarella, finely cubed
  • 1/2 cup freshly grated provolone cheese
  • 2 tbsp all-purpose flour
  • 1/2 cup olive oil
  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 450 degrees F (230 degrees C).
  2. Place chicken between two sheets of plastic wrap and pound with a meat mallet to a uniform 1/2-inch thickness.
  3. Season the chicken breasts thoroughly with salt and pepper on both sides.
  4. Dredge the chicken in flour, shaking off the excess.
  5. Dip the floured chicken into the beaten egg mixture, allowing any excess to drip off.
  6. Press the chicken firmly into a mixture of Panko and grated Parmesan until heavily coated on all sides.
  7. Let the breaded chicken rest for 15 minutes to help the coating adhere.
  8. Heat olive oil in a large skillet over medium-high heat and cook each breast for approximately 2 minutes per side until golden brown.
  9. Transfer the browned chicken to a baking dish.
  10. Spread 2 tablespoons of tomato sauce over each breast, top with mozzarella and provolone cheese.
  11. Bake for 5-8 minutes or until the cheese is bubbling and golden.

Notes

Ensure you pat the chicken dry before seasoning to help the flour and egg adhere better. Letting the breaded chicken rest is a crucial step to prevent the crust from falling off during frying. You can serve this dish alongside a side of pasta or fresh salad for a complete meal.
