Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper

Method

  1. Remove chicken thighs from the refrigerator 30 minutes before cooking to reach room temperature.
  2. Pat the chicken skin and underside thoroughly dry with paper towels to ensure maximum crispness.
  3. In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, salt, and black pepper.
  4. Rub the seasoning mixture evenly over all sides of the chicken thighs.
  5. Preheat your air fryer to 380°F (193°C).
  6. Place the chicken thighs in the air fryer basket in a single layer, skin-side down.
  7. Cook for 20 minutes.
  8. Carefully flip the chicken thighs over so they are skin-side up.
  9. Continue cooking for another 15 minutes or until the internal temperature reaches 165°F and the skin is golden brown and crispy.
  10. Remove from the air fryer and let rest for 5 minutes before serving.

Notes

Patting the skin dry is the most important step for achieving a crispy texture. Do not skip this. If you prefer extra heat, add a pinch of cayenne pepper to the spice blend. Store leftovers in an airtight container for up to 3 days and reheat in the air fryer for 3-5 minutes to restore crispness.
