Ingredients
  

  • 2 cups cooked shredded chicken
  • 3 oz softened cream cheese
  • 1/4 cup salsa
  • 1 cup shredded pepper jack cheese
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tbsp lime juice
  • 1/4 cup chopped cilantro
  • 2 scallions, sliced
  • 12 small flour tortillas (6-inch)

Method
 

  1. In a large bowl, mix the softened cream cheese, salsa, lime juice, cumin, chili powder, onion powder, garlic, cilantro, and scallions until smooth.
  2. Add the shredded chicken and pepper jack cheese to the bowl and fold until well combined.
  3. Spoon about 2-3 tablespoons of the mixture onto the center of each flour tortilla.
  4. Roll each tortilla tightly and place seam-side down.
  5. Lightly spray the air fryer basket and the tops of the taquitos with oil.
  6. Air fry at 375°F for 10-12 minutes or until golden brown and crispy, flipping halfway through.

Notes

Ensure tortillas are at room temperature or slightly warmed in the microwave for 15 seconds to prevent cracking during rolling. Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the air fryer to restore crispiness.
