Ingredients
  

  • 2 large chicken breasts, sliced lengthwise into 4 cutlets
  • 1/2 tsp garlic powder
  • 2 tbsp flour
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/4 cup low-sodium chicken broth
  • 1 heaping tsp Dijon mustard
  • 1 cup heavy cream
  • 2 cups baby spinach
  • 1/4 cup sun-dried tomatoes
  • 1 tbsp fresh basil, chopped
  • Salt and pepper to taste

Method
 

  1. Slice the chicken breasts lengthwise into thinner cutlets.
  2. Season both sides of the chicken with salt, pepper, and garlic powder.
  3. Dredge each chicken piece lightly in flour, shaking off any excess.
  4. Melt olive oil and butter in a large skillet over medium-high heat.
  5. Sear chicken cutlets until golden brown and cooked through, then remove from the pan.
  6. Pour chicken broth and Dijon mustard into the skillet, scraping up any browned bits.
  7. Stir in the heavy cream and simmer until slightly thickened.
  8. Add sun-dried tomatoes and baby spinach, stirring until the spinach wilts.
  9. Return the chicken to the skillet to coat with the sauce.
  10. Garnish with fresh basil and serve immediately.
