Ingredients
Method
- Pat chicken tenders dry and season with 0.75 tsp salt, paprika, and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side until golden brown and cooked through; remove from skillet and set aside.
- Add sliced mushrooms to the same skillet and sauté until browned and tender.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up any browned bits.
- Reduce heat to medium-low and whisk in the heavy cream and Dijon mustard.
- Simmer the sauce for 3-5 minutes until slightly thickened.
- Return the chicken to the skillet to warm through.
- Stir in the fresh tarragon and adjust seasoning with the remaining 0.25 tsp salt if needed.
Notes
Ensure the heavy cream is at room temperature to prevent curdling when added to the warm sauce.
You can substitute olive oil with unsalted butter for a richer flavor profile.
Serve alongside roasted potatoes, crusty bread, or steamed green beans to soak up the creamy sauce.
