- Place the chicken, potatoes, carrots, and onion into the crockpot.
- In a small bowl, whisk together the chicken broth, soy sauce, brown sugar, curry powder, salt, pepper, garlic, and ginger.
- Pour the spice mixture over the ingredients in the crockpot and stir to coat.
- Cover and cook on low for 4-6 hours until the chicken is cooked through and vegetables are tender.
- Whisk the flour into the coconut milk until smooth, then stir the mixture into the crockpot.
- Cover and cook for an additional 15-20 minutes on high until the sauce has thickened.
- Serve warm, optionally over rice or with naan.
Notes
Use full-fat canned coconut milk for the creamiest texture. If you prefer more heat, add a pinch of cayenne pepper or red pepper flakes. This dish is excellent for meal prep and stores well in the refrigerator for up to 3 days.
