  • 12 oz spaghetti
  • 4 tbsp unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 0.5 cup diced onion
  • 2 cloves garlic, minced
  • 0.5 cup all-purpose flour
  • 2.5 cups milk
  • 1 cup sour cream
  • 1.5 cups low-sodium chicken broth
  • 0.75 cup white grape juice
  • 2 cups shredded Colby Jack cheese
  • 1 tsp fresh thyme
  • 4 cups cooked shredded chicken

Method
 

  1. Preheat your oven to 400°F.
  2. Boil a large pot of salted water and cook the spaghetti until al dente, then drain and set aside.
  3. Melt the butter in a large saucepan over medium heat.
  4. Add the onions and mushrooms to the butter and sauté until softened.
  5. Stir in the minced garlic and thyme, cooking for 1 minute until fragrant.
  6. Whisk in the flour and cook for 2 minutes to create a roux.
  7. Gradually whisk in the milk, chicken broth, and white grape juice until smooth.
  8. Bring the sauce to a simmer and stir in the sour cream until combined.
  9. Fold in the cooked shredded chicken and the cooked spaghetti until evenly coated.
  10. Transfer the mixture to a baking dish and top with the shredded Colby Jack cheese.
  11. Bake for 15-20 minutes or until the sauce is bubbly and the cheese is golden brown.

Notes

Substitute button mushrooms if cremini are unavailable. Use a rotisserie chicken for even faster preparation. Dried thyme can be used in place of fresh. Ensure milk and sour cream are at room temperature to maintain a smooth sauce consistency.
