Ingredients
  

  • Olive oil (1 tbsp)
  • Shallot (1 large, diced)
  • Garlic (2 cloves, chopped)
  • Chicken sausage (12 oz, coconut-based or turkey)
  • Orzo (2 cups)
  • Oregano (1 tsp, or basil)
  • Half-and-half (½ cup; substitute unsweetened milk)
  • Spinach (2 cups, or kale/chard)
  • Grated Parmesan (⅓ cup)

Method
 

  1. Heat oil in a pot until shimmering
  2. Add shallot and garlic, sauté 3-4 minutes until translucent
  3. Add chicken sausage, cook 5 minutes until golden
  4. Scatter orzo over sausage, toast 1 minute
  5. Stir in herbs and broth, bring to a boil, reduce heat, cover, and simmer 10 minutes
  6. Stir in half-and-half and spinach, simmer 1-2 minutes
  7. Finish with Parmesan, salt, and pepper, serve hot

Notes

Use chili flakes in step 3 for extra heat
Melt orzo in sausage fat before adding liquid
Add sautéed sun-dried tomatoes for Mediterranean flair
Replace orzo with rice if preferred
Shallot substitutions: yellow onion
Garlic substitutions: raw or grated
Chicken sausage substitutes: coconut-based or turkey
