Method
- Heat oil in a pot until shimmering
- Add shallot and garlic, sauté 3-4 minutes until translucent
- Add chicken sausage, cook 5 minutes until golden
- Scatter orzo over sausage, toast 1 minute
- Stir in herbs and broth, bring to a boil, reduce heat, cover, and simmer 10 minutes
- Stir in half-and-half and spinach, simmer 1-2 minutes
- Finish with Parmesan, salt, and pepper, serve hot
Notes
Use chili flakes in step 3 for extra heat
Melt orzo in sausage fat before adding liquid
Add sautéed sun-dried tomatoes for Mediterranean flair
Replace orzo with rice if preferred
