Ingredients
  

  • 2 large chicken breasts, split horizontally into 4 steaks
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 45g unsalted butter, divided
  • 300g mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup low sodium chicken stock
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Method
 

  1. Cut each chicken breast in half horizontally to create four thin steaks.
  2. Season both sides of the chicken with salt and pepper, then lightly coat with flour.
  3. Melt 15g of butter in a large pan over medium-high heat.
  4. Sear chicken for 2.5 minutes per side until golden and cooked through; set aside.
  5. Add remaining 30g butter to the pan over high heat.
  6. Sauté sliced mushrooms until browned.
  7. Stir in minced garlic and cook for 1 minute until fragrant.
  8. Pour in chicken stock and simmer to deglaze the pan, scraping up any browned bits.
  9. Stir in heavy cream and Parmesan cheese, simmering until the sauce thickens.
  10. Return the chicken to the pan to coat with the sauce and serve immediately.

Notes

Ensure the chicken is sliced evenly to keep cooking times consistent across all pieces. You can substitute button mushrooms with cremini or shiitake for added depth of flavor. Store any leftovers in an airtight container for up to 2 days.
