Ingredients
  

  • 2 boneless chicken breasts, pounded to even thickness
  • 2 tsp Italian seasoning
  • 1 tbsp olive or vegetable oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup Parmesan cheese, freshly grated
  • 8 oz fettuccine pasta

Method
 

  1. Season both sides of the chicken breasts evenly with Italian seasoning and a pinch of salt.
  2. Heat a large skillet over medium heat and add the cooking oil.
  3. Cook chicken for 7-8 minutes per side until golden brown and fully cooked through.
  4. Remove chicken from the skillet and set aside to rest before slicing.
  5. In the same skillet, melt the butter over medium heat.
  6. Add the minced garlic and sauté until fragrant, about 1 minute.
  7. Pour in the heavy cream and simmer gently for 2-3 minutes.
  8. Stir in the freshly grated Parmesan cheese until melted and the sauce thickens.
  9. Boil the fettuccine in salted water until al dente, reserving a splash of pasta water.
  10. Toss the pasta directly into the sauce, adding a bit of reserved water to reach desired consistency.
  11. Serve the pasta topped with sliced chicken.

Notes

Always use freshly grated Parmesan cheese rather than pre-grated varieties to ensure a smooth, non-gritty sauce. You can substitute linguine for fettuccine if preferred. Ensure the chicken rests for 5 minutes before slicing to keep it juicy.
