Ingredients
Method
- Season both sides of the chicken breasts evenly with Italian seasoning and a pinch of salt.
- Heat a large skillet over medium heat and add the cooking oil.
- Cook chicken for 7-8 minutes per side until golden brown and fully cooked through.
- Remove chicken from the skillet and set aside to rest before slicing.
- In the same skillet, melt the butter over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and simmer gently for 2-3 minutes.
- Stir in the freshly grated Parmesan cheese until melted and the sauce thickens.
- Boil the fettuccine in salted water until al dente, reserving a splash of pasta water.
- Toss the pasta directly into the sauce, adding a bit of reserved water to reach desired consistency.
- Serve the pasta topped with sliced chicken.
Notes
Always use freshly grated Parmesan cheese rather than pre-grated varieties to ensure a smooth, non-gritty sauce. You can substitute linguine for fettuccine if preferred. Ensure the chicken rests for 5 minutes before slicing to keep it juicy.
