Ingredients
  

  • 4 chicken breasts (boneless, skinless)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 8 ounces cream cheese (full-fat)
  • 1 cup chicken broth (low-sodium optional)
  • 1/2 cup Parmesan cheese (freshly grated)
  • 2 tablespoons olive oil (extra virgin)
  • 2 tablespoons parsley (or substitute basil/cilantro)

Method
 

  1. Preheat oven to 375°F (190°C). Grease an 8x8-inch baking dish with 1 tablespoon olive oil.
  2. Pat chicken breasts dry. Mix salt, pepper, garlic powder, onion powder, and Italian seasoning. Rub spice mixture over chicken.
  3. Heat remaining 1 tablespoon olive oil in an oven-safe skillet. Sear chicken 2-3 minutes per side until golden.
  4. In a bowl, mix cream cheese, chicken broth, Parsley, and 1/4 cup Parmesan. Place seared chicken in baking dish. Pour sauce over chicken, then top with remaining Parmesan.
  5. Bake 35-40 minutes until chicken is fully cooked and top is golden. Let rest 5-10 minutes before serving.

Notes

Substitute fresh garlic for garlic powder if preferred.
Use basil or cilantro instead of parsley for a different flavor profile.
Cover and refrigerate leftovers for up to 3 days.
