- Preheat a heavy-bottomed pot over medium heat.
- Mix sugar, corn syrup, and water in the pot.
- Bring the mixture to a boil, swirling occasionally, until it reaches 340°F (hard crack stage) on a candy thermometer.
- Remove from heat and stir in the flavored extract and gel food coloring until fully incorporated.
- Pour the hot syrup into an airtight jar and let it cool completely.
- Once cooled, use a cotton candy machine to spin the syrup into fluffy clouds. Shape into small mounds and transfer to baking paper to cool.
Notes
Store unused syrup in the fridge for up to 3 months.
