Ingredients
  

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1/2 cup cottage cheese
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon chopped herbs (parsley, chives, or dill)
  • Pinch red pepper flakes (optional)

Method
 

  1. Toast bread slices in a toaster or oven until golden and crisp, about 3 minutes
  2. Halve and pit the avocado. Mash with lemon juice, salt, and black pepper using a fork
  3. Layer half the cottage cheese evenly over each toast
  4. Spread mashed avocado mixture on top
  5. Drizzle olive oil over the toast
  6. Sprinkle herbs and red pepper flakes (if using) across each toast
