- Heat the neutral oil in a large pot or skillet and fry the corn tortilla strips until golden and crisp, then set aside.
- In the same oil, sauté the onion, poblano peppers, garlic, and cilantro stems until softened.
- Add the ancho chili powder, cumin, and oregano, stirring briefly to bloom the spices.
- Transfer the mixture to a crockpot or leave in the heavy-bottomed pot.
- Add the chicken broth, shredded chicken, frozen corn, and crushed tomatoes.
- Simmer the soup for 30 minutes to allow the flavors to meld and the tortilla strips to thicken the broth.
- Stir in the fresh lime juice just before serving.
- Garnish with the reserved crispy tortilla strips and fresh cilantro leaves.
Notes
Use low-sodium chicken broth to control the salt content. If you prefer more heat, keep the seeds in the poblano peppers or add a pinch of cayenne. Store leftovers in an airtight container for up to 3 days.
