Comfort Food Crockpot Chicken Tortilla Soup

A warm and hearty Mexican-inspired chicken tortilla soup designed for both convenience and professional flavor depth. This recipe uses blooming aromatics and toasted tortilla strips to create a rich, velvety broth that is perfectly balanced by fresh lime juice. Using pre-cooked rotisserie chicken makes this a reliable and quick meal that doesn't sacrifice the shredded texture and comfort of a slow-cooked dish.

Ingredients

  • 1/2 cup neutral oil
  • 6 corn tortillas, cut into strips
  • 1 large yellow onion, diced
  • 2 medium poblano peppers, diced
  • 3 cloves garlic, minced
  • 2 tbsp cilantro stems, chopped
  • 2 tsp ancho chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 32 oz chicken broth
  • 4 cups cooked rotisserie chicken, shredded
  • 2 cups frozen corn
  • 15 oz crushed fire-roasted tomatoes
  • 2 tbsp fresh lime juice

Method

  1. Heat the neutral oil in a large pot or skillet and fry the corn tortilla strips until golden and crisp, then set aside.
  2. In the same oil, sauté the onion, poblano peppers, garlic, and cilantro stems until softened.
  3. Add the ancho chili powder, cumin, and oregano, stirring briefly to bloom the spices.
  4. Transfer the mixture to a crockpot or leave in the heavy-bottomed pot.
  5. Add the chicken broth, shredded chicken, frozen corn, and crushed tomatoes.
  6. Simmer the soup for 30 minutes to allow the flavors to meld and the tortilla strips to thicken the broth.
  7. Stir in the fresh lime juice just before serving.
  8. Garnish with the reserved crispy tortilla strips and fresh cilantro leaves.

Notes

Use low-sodium chicken broth to control the salt content. If you prefer more heat, keep the seeds in the poblano peppers or add a pinch of cayenne. Store leftovers in an airtight container for up to 3 days.
