- Melt butter in a large pot over medium-high heat.
- Sauté celery, carrots, onion, garlic, bay leaves, thyme, salt, pepper, and seasoning until fragrant.
- Sear the chicken breasts for 3-5 minutes per side, then transfer to the crockpot.
- Deglaze the pot with a splash of broth and pour everything over the chicken.
- Cook on high for 1 hour 30 minutes until chicken is tender.
- Cut shortening into flour and mix with chilled broth to form a dough.
- Roll the dough thin and cut into strips or shapes.
- Drop the dumplings into the crockpot in batches during the final 30 minutes of cooking until they are cooked through.
Notes
Using bone-in chicken is strongly encouraged as it releases more gelatin and flavor into the broth. Ensure your shortening is very cold to achieve the lightest, flakiest dumpling texture possible.
