- Add sweet potatoes, turmeric, salt, and pepper; stir to coat.
- Pour in chicken broth and simmer until potatoes are tender.
- Stir in the shredded chicken, kale, and coconut milk.
- Cook for an additional 3-5 minutes until the kale is wilted and the soup is heated through.
Notes
Substitute chicken breast with thighs for extra moisture if preferred. Ensure kale ribs are fully removed to avoid tough textures. Keep leftovers stored in an airtight container for up to 3 days.
