Ingredients
  

  • 2 tbsp Olive or Avocado Oil
  • 1.5-2 lbs Boneless Chicken Breast
  • 1 large Yellow Onion, diced
  • 4 garlic cloves, minced
  • 1.5-inch Ginger Root, freshly grated
  • 2 large Sweet Potatoes, peeled and cut into 1-inch cubes
  • Kosher Salt and Black Pepper to taste
  • 1 tsp Turmeric Powder
  • 4 cups Low-sodium Chicken Broth
  • 3 cups Chopped Kale, stems removed
  • 7 oz Light Coconut Milk

Method
 

  1. Heat 1 tablespoon of oil in a large pot over medium heat.
  2. Season chicken breast with salt and pepper.
  3. Cook chicken for 5-7 minutes per side until reaching 165F; remove and shred.
  4. Add remaining oil to the same pot and sauté onion, garlic, and ginger until fragrant.
  5. Add sweet potatoes, turmeric, salt, and pepper; stir to coat.
  6. Pour in chicken broth and simmer until potatoes are tender.
  7. Stir in the shredded chicken, kale, and coconut milk.
  8. Cook for an additional 3-5 minutes until the kale is wilted and the soup is heated through.

Notes

Substitute chicken breast with thighs for extra moisture if preferred. Ensure kale ribs are fully removed to avoid tough textures. Keep leftovers stored in an airtight container for up to 3 days.
