- Heat the avocado oil in a Dutch oven or large stock pot over medium heat.
- Add the chopped chicken and brown for 3 to 5 minutes until juices have released.
- Stir in the chili powder, oregano, basil, ginger, cinnamon, and salt to coat the chicken.
- Add the finely chopped green bell pepper and diced carrots, sautéing for 5 minutes until softened.
- Pour in the pumpkin puree and chicken bone broth, stirring until well combined.
- Reduce heat to low and simmer for approximately 35-40 minutes until carrots are tender and flavors have melded.
- Fold in the chopped heirloom tomato just before serving.
- Remove from heat and serve warm.
Notes
Ensure the pumpkin puree is 100% pumpkin without added spices or sugars. For a thicker consistency, you can simmer uncovered for an extra 10 minutes. Store in an airtight container in the refrigerator for up to 3 days.
