Ingredients
  

  • 2 Tbsp Avocado Oil
  • 1 1/4 lbs Boneless, skinless chicken breasts, chopped
  • 1 Tbsp Chili powder
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Ground ginger
  • 1/4 tsp Ground cinnamon
  • 1/2 tsp Sea salt
  • 1/2 Green bell pepper, chopped finely
  • 2 large Carrots, peeled and diced
  • 1 15-ounce can Pumpkin puree, unsweetened
  • 1 cup Chicken bone broth
  • 1 Heirloom tomato, chopped

Method
 

  1. Heat the avocado oil in a Dutch oven or large stock pot over medium heat.
  2. Add the chopped chicken and brown for 3 to 5 minutes until juices have released.
  3. Stir in the chili powder, oregano, basil, ginger, cinnamon, and salt to coat the chicken.
  4. Add the finely chopped green bell pepper and diced carrots, sautéing for 5 minutes until softened.
  5. Pour in the pumpkin puree and chicken bone broth, stirring until well combined.
  6. Reduce heat to low and simmer for approximately 35-40 minutes until carrots are tender and flavors have melded.
  7. Fold in the chopped heirloom tomato just before serving.
  8. Remove from heat and serve warm.

Notes

Ensure the pumpkin puree is 100% pumpkin without added spices or sugars. For a thicker consistency, you can simmer uncovered for an extra 10 minutes. Store in an airtight container in the refrigerator for up to 3 days.
