  • 1/4 cup unsalted butter
  • 3/4 cup carrots, finely chopped
  • 3/4 cup celery, diced
  • 1/4 cup yellow onion, finely chopped
  • 1/2 teaspoon garlic, minced
  • 1/4 cup all-purpose flour
  • 3 1/2 cups chicken broth (low-sodium)
  • 1/2 cup heavy cream
  • 6 ounces wide egg noodles
  • 1 1/2 cups shredded chicken

Method
 

  1. Melt the butter in a large skillet over medium-low heat until bubbling.
  2. Add the chopped carrot, diced celery, and finely chopped onion to the skillet.
  3. Sauté the vegetables for about 5 minutes until they are soft.
  4. Stir in the minced garlic and cook for 30 to 60 seconds until fragrant.
  5. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook the raw flour taste out.
  6. Slowly whisk in the chicken broth and heavy cream, ensuring there are no lumps.
  7. Add the egg noodles to the skillet, pushing them down into the liquid.
  8. Cover and simmer for about 8-10 minutes, or until the noodles are tender and the sauce has thickened.
  9. Stir in the shredded chicken and heat through until warm.
  10. Serve immediately.

Use rotisserie chicken to save significant time during preparation.
Whole milk can be used as a lighter alternative to heavy cream if desired.
