Comfort Food Chicken and Butternut Squash Sheet Pan Meal

Ingredients
  

  • 2 cups brown rice, cooked
  • 1 15-ounce can black beans, rinsed and drained
  • 1 cup fresh cilantro, chopped
  • 3 cups butternut squash, cubed into 1-inch pieces
  • 2 chicken breasts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 8 ounces guacamole

Method
 

  1. Preheat oven to 450 degrees Fahrenheit and line a baking sheet with foil.
  2. Cook brown rice as directed and toss with 1/2 cup of fresh cilantro.
  3. Warm the black beans in a saucepan or microwave and set aside.
  4. In a small bowl, combine cumin, chili powder, salt, and pepper.
  5. Toss butternut squash with half of the olive oil and half of the seasoning blend, then spread on the sheet pan.
  6. Rub the chicken breasts with the remaining oil and seasoning blend.
  7. Place chicken on the baking sheet alongside the squash.
  8. Roast for 20 minutes or until chicken is cooked through and squash is tender.
  9. Serve chicken and squash over a bed of cilantro rice and black beans.
  10. Top with generous portions of guacamole and remaining cilantro.

Notes

Ensure chicken is sliced into even thickness for uniform roasting.
Leftovers store well in airtight containers for up to 3 days.
Add a squeeze of lime juice for extra brightness.
