- Pat the chicken cutlets dry with paper towels.
- Season both sides of each cutlet with salt and pepper.
- Place flour in a shallow dish and lightly dredge each chicken cutlet, shaking off excess.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add chicken cutlets to the skillet and cook for 3-4 minutes per side until golden brown and cooked through; remove and set aside.
- In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the pan.
- Simmer for 3-5 minutes until the sauce reduces slightly.
- Whisk in the remaining tablespoon of butter, lemon zest, and capers.
- Return the chicken to the pan to coat in the sauce, garnish with fresh parsley, and serve immediately.
Notes
Ensure the chicken cutlets are of uniform thickness for even cooking. For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. Serve over angel hair pasta, rice, or steamed vegetables.
