  • 2 Chicken Breasts, cut into 4 thin cutlets
  • 2 tbsp Olive Oil
  • 3 tbsp Unsalted Butter
  • 8 oz Cremini Mushrooms, sliced
  • 1/4 cup Grape Juice or Apple Cider
  • 1 Shallot, minced
  • 2 Garlic cloves, pressed
  • 1/2 cup Low-sodium Chicken Broth
  • 1 tbsp Dijon Mustard
  • 1 tsp Worcestershire sauce
  • 1/2 cup Heavy Cream
  • Freshly chopped Parsley for garnish
  • Kosher salt and black pepper to taste

Method
 

  1. Season chicken cutlets generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Cook chicken for 2-3 minutes per side until golden brown, then remove and set aside.
  4. Reduce heat to medium and add butter to the same skillet.
  5. Sauté mushrooms until browned and tender.
  6. Add minced shallot and garlic, cooking until fragrant.
  7. Deglaze the pan with grape juice or apple cider, scraping up the browned bits.
  8. Stir in chicken broth, Dijon mustard, and Worcestershire sauce; simmer for 3 minutes.
  9. Lower heat, stir in the heavy cream, and return chicken to the pan.
  10. Simmer until the sauce thickens and chicken is heated through.
  11. Garnish with fresh parsley before serving.
