Ingredients
  

  • 1 lb chicken thighs, trimmed and cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1/2 zucchini, sliced or cubed
  • 1 small carrot, julienned or cubed
  • 8 oz mushrooms, sliced
  • 1/2 red pepper, cubed
  • 1/2 onion, cubed
  • 4 cloves garlic, minced finely
  • 1 tsp fresh ginger, minced
  • 1/2 cup cashews, roasted or raw
  • 2 Tbsp cooking oil, divided
  • 1 Tbsp unsalted butter
  • 1/2 cup chicken broth
  • 3 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 tsp cornstarch

Method
 

  1. Trim the chicken thighs and slice them into uniform bite-sized pieces.
  2. Chop all vegetables into sizes similar to the chicken for even cooking.
  3. In a small bowl, whisk together the chicken broth, soy sauce, honey, and cornstarch until smooth.
  4. Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
  5. Add the chicken pieces and sear until cooked through and golden; remove from the pan.
  6. Add the remaining oil and butter to the skillet, then stir fry the vegetables until crisp-tender.
  7. Return the chicken to the skillet along with the garlic, ginger, and cashews.
  8. Pour the sauce mixture over the stir fry and toss continuously until the sauce thickens into a glossy glaze.

Notes

You can swap the vegetables for whatever seasonal produce you have on hand. Ensure the heat remains high for the signature stir-fry texture. Store leftovers in an airtight container for up to 3 days.
