Method
- Trim the chicken thighs and slice them into uniform bite-sized pieces.
- Chop all vegetables into sizes similar to the chicken for even cooking.
- In a small bowl, whisk together the chicken broth, soy sauce, honey, and cornstarch until smooth.
- Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
- Add the chicken pieces and sear until cooked through and golden; remove from the pan.
- Add the remaining oil and butter to the skillet, then stir fry the vegetables until crisp-tender.
- Return the chicken to the skillet along with the garlic, ginger, and cashews.
- Pour the sauce mixture over the stir fry and toss continuously until the sauce thickens into a glossy glaze.
Notes
You can swap the vegetables for whatever seasonal produce you have on hand. Ensure the heat remains high for the signature stir-fry texture. Store leftovers in an airtight container for up to 3 days.
