- Slice chicken horizontally into 1/2-inch thick strips.
- Whisk lime juice, 3 tbsp olive oil, cilantro, garlic, cumin, chili powder, salt, and jalapeño in a bowl.
- Submerge chicken in the marinade and let rest for at least 30 minutes.
- Remove chicken from marinade and wipe off excess moisture.
- Heat remaining 2 tbsp olive oil in a cast-iron skillet over high heat until shimmering.
- Sear chicken in a single layer for 3 minutes per side until golden brown.
- Remove chicken to a cutting board, cover with foil, and let rest for 5 minutes.
- In the same skillet, sauté sliced onions and peppers until tender and charred at the edges.
- Combine chicken and vegetables in the pan, garnish with fresh cilantro, and serve.
Notes
Serve with warm flour or corn tortillas, avocado slices, or Greek yogurt as a sour cream substitute. To keep the chicken juicy, avoid overcrowding the skillet during the searing process.
