- In a shallow bowl, combine flour, salt, pepper, garlic powder, and onion powder.
- In a second bowl, whisk the eggs and stir in the warmed coconut milk.
- In a third bowl, mix together the Panko breadcrumbs and shredded coconut.
- Heat the coconut oil in a large frying pan over medium-high heat until it reaches 350°F.
- Dredge each chicken tender in the flour mixture, shaking off the excess.
- Dip the floured tender into the egg and coconut milk mixture.
- Press the chicken firmly into the coconut-breadcrumb mixture to coat evenly.
- Fry the chicken for 3-4 minutes per side until golden brown and cooked through.
- Remove the tenders from the pan and place them on a wire cooling rack to drain excess oil.
Notes
Ensure your oil reaches 350 degrees exactly to avoid greasy breading. Use a wire cooling rack instead of paper towels to keep the breading crisp on all sides. Serve with a side of pineapple dipping sauce or sweet chili sauce.
