Ingredients
  

  • 1.5 kg bone-in, skin-on chicken thighs and drumsticks
  • 1 tbsp olive oil
  • 2 onions, halved and wedged
  • 2 cloves garlic, minced
  • 3 large carrots, thick-cut chunks
  • 4 stalks celery, 2cm chunks
  • 3 cups low-sodium chicken broth
  • 2 tbsp tomato paste
  • 2 tsp non-alcoholic Worcestershire sauce
  • 600g baby potatoes, halved
  • 3 sprigs fresh thyme
  • 2 bay leaves

Method
 

  1. Preheat your oven to 180C/350F.
  2. Heat the olive oil in a heavy-duty pot over high heat.
  3. Brown the seasoned chicken pieces on both sides until they develop a light golden crust.
  4. Remove the chicken from the pot and set aside on a plate.
  5. Sauté the onions and garlic in the remaining fat for 2 minutes until translucent.
  6. Add carrots, celery, and potatoes to the pot, stirring to combine.
  7. Stir in the tomato paste, chicken broth, and non-alcoholic Worcestershire sauce.
  8. Return the browned chicken to the pot, nestling it into the vegetables.
  9. Add thyme sprigs and bay leaves.
  10. Transfer the pot to the oven and roast for approximately 1 hour and 20 minutes until the chicken is tender and the vegetables are soft.

Notes

Ensure the chicken is skin-side up during roasting for maximum crispiness. Use a Dutch oven or a heavy-duty stainless steel pot for best heat retention. Store leftovers in an airtight container for up to 3 days.
