- Preheat your oven to 180C/350F.
- Heat the olive oil in a heavy-duty pot over high heat.
- Brown the seasoned chicken pieces on both sides until they develop a light golden crust.
- Remove the chicken from the pot and set aside on a plate.
- Sauté the onions and garlic in the remaining fat for 2 minutes until translucent.
- Add carrots, celery, and potatoes to the pot, stirring to combine.
- Stir in the tomato paste, chicken broth, and non-alcoholic Worcestershire sauce.
- Return the browned chicken to the pot, nestling it into the vegetables.
- Add thyme sprigs and bay leaves.
- Transfer the pot to the oven and roast for approximately 1 hour and 20 minutes until the chicken is tender and the vegetables are soft.
Notes
Ensure the chicken is skin-side up during roasting for maximum crispiness. Use a Dutch oven or a heavy-duty stainless steel pot for best heat retention. Store leftovers in an airtight container for up to 3 days.
