Method
- Brush one side of each bread slice with olive oil
- Heat a skillet over medium heat and place bread, oiled side down, to toast for 2-3 minutes per side
- Remove from heat once bread is golden and crispy
- Spread 1 tbsp basil pesto onto the inside of each bread slice
- Season cooked chicken with salt and pepper, then place on half the bread slices
- Top with mozzarella cheese slices followed by tomato wedges
- Place remaining bread slices on top of the fillings, pesto side up
- Cook each sandwich for 3 minutes on each side until cheese melts and bread turns golden brown
- Let rest 1 minute before slicing
