Chicken Pesto Sandwich

Ingredients
  

  • Chicken breast, 2, cooked, sliced
  • Bread, 4 slices (ciabatta or sourdough)
  • Basil pesto, 1/4 cup
  • Tomatoes, 1 medium, sliced
  • Mozzarella Cheese, 4 slices
  • Olive Oil, 1 tbsp
  • Salt, 1/2 tsp
  • Black Pepper, 1/2 tsp

Method
 

  1. Brush one side of each bread slice with olive oil
  2. Heat a skillet over medium heat and place bread, oiled side down, to toast for 2-3 minutes per side
  3. Remove from heat once bread is golden and crispy
  4. Spread 1 tbsp basil pesto onto the inside of each bread slice
  5. Season cooked chicken with salt and pepper, then place on half the bread slices
  6. Top with mozzarella cheese slices followed by tomato wedges
  7. Place remaining bread slices on top of the fillings, pesto side up
  8. Cook each sandwich for 3 minutes on each side until cheese melts and bread turns golden brown
  9. Let rest 1 minute before slicing

Notes

Use cooked rotisserie chicken for convenience
Heirloom tomatoes add extra sweetness
Switch to provolone for a sharper flavor
Day-old bread toasts best for a crispy texture
