Chicken Fried Rice: A Simple Instant Pot Recipe

Ingredients
  

  • 2 cups white rice
  • 2 cups filtered water
  • 1 pound chicken breast, cut into bite-sized pieces
  • 3 tablespoons vegetable oil
  • 1 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 large eggs, lightly beaten
  • 1.5 tablespoons low-sodium soy sauce
  • 1 teaspoon toasted sesame oil

Method
 

  1. Rinse the white rice under cold water in a colander until the water runs clear.
  2. Combine the rinsed rice and 2 cups of water in the Instant Pot inner pot.
  3. Cook on High Pressure for 4 minutes, followed by a 10-minute natural pressure release.
  4. Remove the cooked rice from the pot, fluff with a fork, and set aside in a bowl.
  5. Thoroughly clean and dry the Instant Pot inner pot.
  6. Set the Instant Pot to Sauté mode and add the vegetable oil.
  7. Add the chicken pieces and cook until browned and fully cooked through.
  8. Stir in the chopped onions and minced garlic, sautéing until fragrant.
  9. Add the frozen peas and carrots, cooking for another 2-3 minutes.
  10. Push the mixture to one side of the pot and add the beaten eggs, scrambling them until cooked.
  11. Stir the cooked rice back into the pot with the chicken and vegetables.
  12. Pour the soy sauce over the rice and stir everything together until well combined.
  13. Turn off the Sauté function and stir in the toasted sesame oil before serving.

Notes

Ensure the Instant Pot inner pot is completely clean after cooking the rice to prevent any sticking or scorching during the Sauté phase. Use cold, day-old rice if you have it available, though the Instant Pot method provided yields excellent results for immediate use.
