Ingredients
  

  • Crusty bread, 5 ounces (tear into uneven cubes)
  • Extra virgin olive oil, 3 tablespoons total (2 for croutons, 1 for dressing)
  • Kosher salt, 1/2 teaspoon + extra
  • Black pepper, ground to taste
  • Chicken breast, 1 pound (skinless, boneless)
  • Tomatoes, halved
  • Fresh mozzarella pearls (1 1/2 cups)
  • Fresh basil leaves (1/4 cup shredded)
  • Italian seasoning, 1 teaspoon

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Toss bread cubes with 2 tablespoons olive oil, 1/2 teaspoon salt, pepper, and Italian seasoning
  3. Spread on a baking sheet and bake for 10 minutes until golden
  4. Season chicken breasts with salt, pepper, and Italian seasoning
  5. Cook chicken in a skillet over medium heat until golden and cooked through (6-8 minutes per side)
  6. Arrange mozzarella pearls, tomato halves, and basil leaves on a serving platter
  7. Top with croutons and chicken
  8. Drizzle with 1 tablespoon olive oil and optional balsamic glaze

Use gluten-free bread for dietary needs
Mozzarella pearls simplify serving and add texture
