Ingredients
  

  • 3 chicken breasts, thinly sliced
  • 2/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon fresh garlic, minced
  • 2 tablespoons sesame oil
  • 1 head of broccoli, cut into florets
  • 1 large onion, cut into chunks
  • 1 cup carrots, thinly sliced
  • 1 can water chestnuts, drained and sliced
  • 1 bell pepper, cut into matchsticks

Method
 

  1. Whisk together soy sauce, brown sugar, cornstarch, ginger, and garlic in a bowl to create the sauce.
  2. Toss sliced chicken with half of the sesame oil and a splash of the sauce mixture to marinate.
  3. Heat remaining sesame oil in a large wok or skillet over medium-high heat.
  4. Add chicken to the hot pan and stir-fry until cooked through, then remove from pan.
  5. Add broccoli, carrots, onions, and bell peppers to the same pan, stir-frying until tender-crisp.
  6. Return the chicken to the pan and pour in the prepared sauce.
  7. Stir constantly for 2-3 minutes until the sauce thickens and coats everything evenly.
  8. Serve hot over prepared white rice.

Notes

Ensure you slice the chicken against the grain for maximum tenderness. Feel free to use any leftover vegetables in your fridge to make this dish your own. For a gluten-free option, substitute soy sauce with tamari.
