Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/4 cup butter, melted
  • 1 cup Italian breadcrumbs
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup Parmesan cheese, finely grated
  • 1 cup marinara sauce
  • 4 ounces mozzarella cheese, thinly sliced
  • 2 tbsp fresh basil or parsley, chopped
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425 degrees F.
  2. Season both sides of the chicken breasts generously with salt and pepper.
  3. Pour melted butter into a medium bowl and combine breadcrumbs and Parmesan in a wide shallow dish.
  4. Dip each chicken breast into the butter until coated.
  5. Press the chicken into the breadcrumb mixture until fully coated on both sides.
  6. Place chicken on a lined baking sheet and bake for 20 minutes.
  7. Remove from oven, top each breast with marinara sauce and a slice of mozzarella.
  8. Return to the oven for 10 minutes or until cheese is bubbly and chicken is fully cooked.
  9. Garnish with fresh herbs before serving.

Notes

Ensure chicken breasts are of equal thickness for even cooking. You can pound them slightly if they are uneven. Keep leftover chicken in an airtight container for up to 3 days, though it is best eaten fresh for maximum crispness.
