- Whisk together 1/4 cup olive oil, half the lime juice, chili powder, cumin, oregano, garlic powder, salt, and pepper.
- Marinate chicken strips in the mixture for 20 minutes.

- Add chicken and sear until golden and cooked through; remove from pan.
- In the same pan, add sliced peppers and onions, cooking until tender and slightly caramelized.
- Mix remaining lime juice with Greek yogurt to create the creamy sauce.
- Assemble bowls by layering rice, chicken, and sautéed vegetables.
- Drizzle with the lime sauce and garnish with fresh cilantro.
Notes
Ensure you do not crowd the pan to get a proper sear on the chicken and vegetables. You can substitute Greek yogurt for sour cream for a higher protein, lighter alternative. Store leftovers in an airtight container for up to 3 days.
