Ingredients
  

  • 2 whole chicken breasts, sliced in half lengthwise
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 6 oz traditional basil pesto
  • 6 oz fresh mozzarella cheese, sliced or grated
  • 8 cocktail tomatoes, sliced into rounds
  • Balsamic glaze for garnish
  • A handful of fresh basil leaves, slivered

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Slice chicken breasts horizontally to create four even cutlets and season generously with salt and pepper.
  3. Heat olive oil and butter in a large oven-proof skillet over medium-high heat.
  4. Sear the chicken for three to four minutes per side until browned.
  5. Remove from heat and spread a layer of pesto onto each chicken breast.
  6. Top the chicken with mozzarella cheese slices and tomato rounds.
  7. Transfer the skillet to the preheated oven and bake until the chicken is cooked through and cheese is melted.
  8. Garnish with slivered fresh basil and a drizzle of balsamic glaze before serving.

Notes

Ensure you use an oven-safe skillet such as cast iron for the best sear. For an even richer flavor, you can roast the tomatoes slightly alongside the chicken if your pan size allows. Store leftovers in an airtight container for up to two days.
