- Heat butter or olive oil in a large pot or Dutch oven over medium-high heat.

- Add the rinsed wild rice, salt, and pepper.
- Cover the pot, reduce heat to low, and simmer for 40-45 minutes or until rice is tender.
- Stir in the shredded chicken and cook for an additional 5 minutes until heated through.
- Adjust seasoning with salt and pepper as needed before serving.
Notes
Using pre-cooked rotisserie chicken makes this meal come together even faster. For a dairy-free version, use olive oil instead of butter. Store leftovers in an airtight container in the refrigerator for up to 3 days. Wild rice absorbs a lot of liquid, so you may need to add a splash of extra stock when reheating.
