  • 1.5 lbs boneless, skinless chicken breast, cubed
  • 10.5 oz condensed cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 6 oz classic chicken stuffing mix
  • 0.75 cup sour cream
  • 4 tbsp unsalted butter, melted
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish with butter or nonstick cooking spray.
  3. Toss the cubed chicken with salt, garlic powder, onion powder, and pepper in a medium bowl.
  4. Arrange the seasoned chicken in a single layer at the bottom of the prepared baking dish.
  5. Whisk together the cream of chicken soup, sour cream, and 1 cup of the chicken broth in a mixing bowl until smooth.
  6. Pour the creamy mixture evenly over the chicken.
  7. Combine the dry stuffing mix with the remaining 1 cup of chicken broth and the melted butter in a separate bowl.
  8. Spread the moistened stuffing mixture evenly over the chicken and soup layer.
  9. Bake for 50 minutes until the chicken is cooked through and the stuffing is golden brown.
  10. Let the casserole rest for 5 minutes before serving.
