Chicago-Style Deep Dish Pizza Recipe

Ingredients
  

  • 3.25 cups all-purpose flour
  • 0.5 cup yellow cornmeal
  • 1 tbsp granulated sugar
  • 2.25 tsp instant yeast (Red Star brand recommended)
  • 1.5 cups warm water
  • 1 cup melted unsalted butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups crushed tomatoes
  • 1 tbsp oregano
  • 2 cups shredded mozzarella cheese
  • Optional toppings: bell peppers, mushrooms, olives, vegan cheese substitutions

Method
 

  1. Combine flour, cornmeal, sugar, and yeast in a bowl
  2. Pour warm water and melted butter into dry ingredients
  3. Knead dough 8-10 minutes until smooth
  4. Let dough rise in warm spot until doubled
  5. Preheat oven to 400°F (200°C)
  6. Sauté onion until golden, add garlic and crushed tomatoes
  7. Simmer sauce 20 minutes with oregano
  8. Press dough into 12-inch deep-dish pan
  9. Layer half the cheese evenly
  10. Add tomato sauce and remaining cheese
  11. Top with desired toppings
  12. Bake 35 minutes or until golden

Notes

Substitute bread flour for stronger structure
Use pizza stone for crispier crust
Avoid opening oven before last 10 minutes
Let pizza rest 10 minutes before slicing
Pre-crease crust with knife for neater slices
