Cherry Amaretto Tiramisu: A Delightful Dessert Twist

Ingredients
  

  • 2 cups pitted cherries (fresh or frozen)
  • 1/4 cup sugar
  • 2 tbsp lemon juice
  • 2 tbsp Amaretto substitute (lemon extract or clear non-alcoholic extract)
  • 1 cup cold brew espresso
  • 24 ladyfingers
  • 16 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp natural unsweetened cocoa powder

Method
 

  1. In a saucepan, combine cherries, sugar, lemon juice, and Amaretto substitute. Cook 5–7 minutes until cherries soften.
  2. Chill compote until room temperature (at least 15 minutes).
  3. Whip cream with chilled bowl until soft peaks form.
  4. Whisk mascarpone with sugar and vanilla until smooth.
  5. Fold whipped cream into mascarpone mixture until glossy.
  6. Stir Amaretto substitute into cooled espresso. Dip ladyfingers briefly in mixture.
  7. Layer ladyfingers in dish, followed by half the mascarpone and half the cherry compote.
  8. Repeat layers, dust with cocoa powder, and refrigerate 4+ hours.
  9. Before serving, top with chocolate shavings and extra cherries.

Notes

Chill compote to prevent ladyfingers from soaking up too much liquid
Use high-fat mascarpone for optimal cream texture
Add cocoa powder lightly between layers for even coating
Cold brew espresso yields best flavor
Store in airtight container for up to 3 days
