- In a saucepan, combine cherries, sugar, lemon juice, and Amaretto substitute. Cook 5–7 minutes until cherries soften.
- Chill compote until room temperature (at least 15 minutes).
- Whip cream with chilled bowl until soft peaks form.
- Whisk mascarpone with sugar and vanilla until smooth.
- Fold whipped cream into mascarpone mixture until glossy.
- Stir Amaretto substitute into cooled espresso. Dip ladyfingers briefly in mixture.
- Layer ladyfingers in dish, followed by half the mascarpone and half the cherry compote.
- Repeat layers, dust with cocoa powder, and refrigerate 4+ hours.
- Before serving, top with chocolate shavings and extra cherries.
