Ingredients
  

  • 24 Ladyfinger Cookies (Savoiardi preferred)
  • 2 cups Pitted Cherries (fresh or thawed frozen)
  • 1/2 cup Cherry Juice
  • 3 tbsp Non-Alcoholic Amaretto Syrup
  • 1/2 cup Sugar (divided for layers)
  • 1 tsp Pure Vanilla Extract
  • 1 1/2 cups Heavy Whipping Cream or Coconut Cream (non-dairy option)
  • 8 oz Mascarpone Cheese (alcohol-free)
  • Dark Chocolate (optional, for garnish)

Method
 

  1. Combine cherries, 1/4 cup sugar, and 2 tbsp water in a saucepan. Simmer until tender (8–10 minutes). Cool, then mix with cherry juice and amaretto syrup.
  2. Beat heavy cream with remaining 1/4 cup sugar and vanilla until soft peaks form. Gently fold in mascarpone until smooth.
  3. Briefly submerge ladyfingers in cherry mixture, then arrange them in an 8×8-inch dish without breaking.
  4. Spread half the mascarpone cream over the ladyfingers and layer half the cooked cherries on top.
  5. Repeat with a second layer of soaked ladyfingers and remaining cream and cherries.
  6. Chill for at least 4 hours. Garnish with extra cherries and shaved dark chocolate before serving.

Notes

Simmer cherries just until tender, not overcooked, for vibrant texture.
Use non-dairy coconut cream for a halal-friendly option.
Chilling time is crucial for flavor melding.
