- Combine cherries, 1/4 cup sugar, and 2 tbsp water in a saucepan. Simmer until tender (8–10 minutes). Cool, then mix with cherry juice and amaretto syrup.
- Beat heavy cream with remaining 1/4 cup sugar and vanilla until soft peaks form. Gently fold in mascarpone until smooth.
- Briefly submerge ladyfingers in cherry mixture, then arrange them in an 8×8-inch dish without breaking.
- Spread half the mascarpone cream over the ladyfingers and layer half the cooked cherries on top.
- Repeat with a second layer of soaked ladyfingers and remaining cream and cherries.
- Chill for at least 4 hours. Garnish with extra cherries and shaved dark chocolate before serving.
