  • 1 cup white rice (long-grain preferred)
  • 3/4 cup salsa or salsa verde
  • 1 1/2 cups water
  • 1 lime (squeezed fresh)
  • 15 oz can black beans (drained/rinsed)
  • 1 cup cheese (Colby Jack or pepper jack)

Method
 

  1. Combine rice, salsa, and water in rice cooker or saucepan
  2. Cook according to standard rice-cooking instructions
  3. Stir in fresh lime juice after base is fully cooked
  4. Preheat oven to 450°F (230°C)
  5. Spread rice mixture into casserole dish
  6. Top with drained black beans and shredded cheese
  7. Bake 5-8 minutes until cheese forms golden bubble

Notes
