Method
- Combine rice, salsa, and water in a rice cooker or saucepan
- Cook according to rice directions (18-20 minutes)
- Add lime juice during final 2 minutes of cooking
- Preheat oven to 450°F (232°C) for 5 minutes
- Transfer rice mixture to an oven-safe casserole dish
- Layer rinsed black beans evenly over the rice
- Sprinkle cheese over the beans
- Bake for 5 minutes until cheese is golden and bubbling
- Let rest 2 minutes before serving
