Chang Lettuce Wraps

Ingredients
  

  • Butter lettuce 1 head
  • Ground chicken 1 lb (93% lean recommended)
  • Olive oil 1 tablespoon
  • Sesame oil 1 tablespoon
  • Diced water chestnuts 8 oz can (drained and dried)
  • Sliced green onions 2 tbsp
  • Gluten-free tamari 2 tbsp (or coconut aminos)
  • Hoisin sauce 1/3 cup (or store-bought dipping sauce)
  • Rice vinegar 1 tbsp
  • Chili garlic sauce 1 tbsp (or sriracha)
  • Garlic 3 cloves
  • Fresh ginger 2 tsp

Method
 

  1. Preheat skillet over medium-high heat and combine olive and sesame oil
  2. Add ground chicken; cook 5-6 minutes, breaking into crumbs
  3. Stir in diced onion; sauté 3 minutes until softened
  4. Mix in hoisin sauce, gluten-free tamari, rice vinegar, chili garlic sauce, minced garlic, and ginger
  5. Add dried water chestnuts; sauté 3 minutes until heated through
  6. Incorporate sliced green onions and season with salt & pepper
  7. Serve mixture in butter lettuce leaves or lettuce cups

Notes

Reserve some green onions for garnish
Adjust chili sauce for desired heat level
Use romaine leaves if butter lettuce is unavailable
Substitute ground turkey for moister texture
Ensure water chestnuts are completely dry to prevent steaming
