Ingredients
  

  • Fresh pineapple
  • 2 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 1/4 cup brown sugar (adjust for pineapple ripeness)
  • 1 teaspoon cinnamon (optional)
  • 1/4 cup mango nectar or orange juice (non-alcoholic substitute for rum)
  • 1 teaspoon vanilla extract (optional, for flavor)

Method
 

  1. Peel and cut pineapple into rings
  2. Melt butter/oil in a cast-iron skillet
  3. Add brown sugar and cinnamon, stirring until melted
  4. Add pineapple rings, sauté 3-4 minutes per side until caramelized
  5. Pour in mango/orange juice; gently simmer 2-3 minutes to form a glaze
  6. Garnish with vanilla extract if using

Notes

Use ripe pineapple for natural sweetness
If overripe, reduce sugar to 2 tablespoons
Serve warm with a dusting of cinnamon
Substitute mango nectar with apple juice or pineapple juice if needed
