Ingredients
  

  • 2 lbs large shrimp, peeled and deveined
  • 1 lb baby potatoes, skin on
  • 4 ears corn, halved in husks
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 3 tbsp Cajun seasoning (adjust for heat)
  • 4 tbsp unsalted butter or coconut oil
  • 1 tsp sea salt
  • ½ tsp cayenne pepper, optional
  • 1 tbsp paprika, preferably smoked

Method
 

  1. 1. In a 6-quart pot, bring 4 cups water to a boil. Add butter, garlic, Cajun seasoning, paprika, salt, and cayenne (if using). Stir to combine.
  2. 2. Add potatoes and corn to the seasoned water. Reduce heat to medium and simmer for 12-15 minutes until tender.
  3. 3. Stir in turkey sausage and onion. Cook for 5-7 minutes until sausage is browned and onion is softened.
  4. 4. Add shrimp to the pot. Cook for 5-10 minutes until shrimp are pink and cooked through. Avoid overcooking.
  5. 5. Drain excess water and serve in the pot or transfer to a platter. Garnish with fresh parsley if desired.

Notes

Customize spice: Add more cayenne for heat.
Substitute sweet potatoes for regular.
Use frozen corn if fresh is unavailable.
Leftovers store well in the refrigerator for 3-4 days.
Garlic powder can replace fresh garlic if needed.
