Ingredients

  • 2 salmon fillets
  • 1/2 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp butter (with 2 tbsp for potatoes if included)
  • 2 tsp Cajun seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 garlic cloves, minced
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese

Method

  1. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  2. Sear salmon and shrimp for 3-4 minutes per side until golden.
  3. Remove seafood and set aside.
  4. Saute garlic in remaining fat until fragrant.
  5. Add heavy cream and Parmesan to create a sauce, stirring until thickened.
  6. Return seafood to the skillet and simmer for 2-3 minutes.
  7. Season with Cajun seasoning, salt, and pepper. Serve warm.

Notes

Use pre-cooked shrimp if fresh isn't available. Substitute avocado oil for high smoke points. Add cubed potatoes during sauce creation for a heartier meal.
