Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 cups shredded mozzarella cheese, divided
  • 0.5 cup grated parmesan cheese, divided
  • 1 cup creamy Caesar dressing (alcohol-free)
  • 1 tablespoon fresh lemon juice

Method

  1. Preheat your oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. In a small bowl, combine the chili powder, salt, and black pepper.
  3. Rub the spice mixture evenly over both sides of each chicken breast.
  4. Place the seasoned chicken into the prepared baking dish.
  5. Sprinkle 0.5 cup of mozzarella and 0.25 cup of parmesan over the chicken.
  6. In a separate bowl, whisk together the Caesar dressing and lemon juice.
  7. Pour the dressing mixture evenly over the chicken and cheese layer.
  8. Top with the remaining mozzarella and parmesan cheese.
  9. Bake for 30 minutes or until the chicken is cooked through and the cheese is golden and bubbly.

Notes

Ensure your Caesar dressing does not contain anchovy paste if you prefer a strict vegetarian option, though traditional Caesar includes anchovies. Always verify that the bottled dressing is alcohol-free. Serve with steamed vegetables or a side salad for a balanced meal.
