Ingredients

  • 8 ounces cream cheese, room temperature
  • 1/2 cup hot wing sauce
  • 1/4 cup blue cheese crumbles
  • 4 ounces Colby Jack cheese, finely shredded
  • 1/4 cup green onions, finely chopped
  • 1 pound cooked chicken, shredded
  • 5 (10-inch) flour tortillas

Method

  1. Beat the softened cream cheese in a large bowl on low speed until smooth and fluffy.
  2. Add the hot wing sauce, blue cheese crumbles, shredded Colby-jack cheese, and chopped green onions to the bowl.
  3. Fold the shredded cooked chicken into the cheese mixture until all ingredients are evenly distributed.
  4. Spread approximately one-quarter of the buffalo chicken mixture evenly over the surface of each flour tortilla.
  5. Roll each tortilla up tightly to ensure the pinwheels remain secure.
  6. Wrap the rolled tortillas in plastic wrap and refrigerate for 3 to 4 hours to firm up the cream cheese base.
  7. Slice each roll into 1-inch thick pinwheels before serving.

Notes

Ensure cream cheese is fully softened for a smooth spread. Blue cheese crumbles can be substituted with feta if preferred. Using rotisserie chicken adds extra flavor. Chilling is essential for clean slicing.
