  • 2 cups broccoli florets, finely chopped
  • 6 ounces cream cheese, softened
  • 0.5 cup cheddar cheese, shredded
  • 1 clove garlic, minced
  • 4 tablespoons olive oil, divided
  • Salt to taste
  • Pepper to taste
  • Onion powder to taste
  • Garlic powder to taste
  • Paprika to taste

Method
 

  1. Preheat your oven to 375°F.
  2. Combine salt, pepper, onion powder, garlic powder, and paprika in a small bowl.
  3. Drizzle two tablespoons of olive oil over the chicken breasts and rub the seasoning blend evenly over all sides.
  4. In a separate bowl, mix the chopped broccoli, cheddar cheese, cream cheese, and minced garlic until well combined.
  5. Cut a horizontal pocket into the thickest part of each chicken breast, being careful not to pierce through the other side.
  6. Stuff each chicken breast with an equal portion of the broccoli cheese mixture.
  7. Heat the remaining two tablespoons of olive oil in a large, oven-safe skillet over medium-high heat.
  8. Sear each stuffed chicken breast for two to three minutes per side until golden brown.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
