  • 6 ounces cream cheese, softened
  • 1/2 cup cheddar cheese, freshly shredded
  • 4 tablespoons olive oil, divided

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

  1. Preheat your oven to 375°F.
  2. Combine the salt, pepper, onion powder, garlic powder, and paprika in a small bowl.
  3. Drizzle two tablespoons of olive oil over the chicken breasts and rub thoroughly with the spice mixture.
  4. In a medium bowl, mix the softened cream cheese, shredded cheddar, chopped broccoli, and minced garlic until well combined.
  5. Cut a horizontal pocket into the side of each chicken breast, being careful not to cut all the way through.
  6. Stuff each breast generously with the broccoli and cheese mixture, securing the edges with toothpicks if necessary.
  7. Heat the remaining two tablespoons of olive oil in an oven-safe skillet over medium-high heat.
  8. Sear the chicken breasts for 3-4 minutes per side until golden brown.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F.
  10. Remove from the oven, let rest for 5 minutes, and serve warm.
