- Cut a horizontal pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each breast generously with the broccoli and cheese mixture, securing the edges with toothpicks if necessary.
- Heat the remaining two tablespoons of olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes per side until golden brown.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F.
- Remove from the oven, let rest for 5 minutes, and serve warm.
