- Stir in the chili powder, cumin, garlic powder, salt, black pepper, and smoked paprika.
- Add the black beans and diced tomatoes, stirring to combine all spices.
- Cover and simmer for 10 minutes until the sweet potatoes are fork-tender.
- Stir in the chopped kale and cook for 2 minutes until wilted.
- Garnish with fresh cilantro before serving directly from the skillet.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop over low heat. For extra creaminess, serve with a slice of avocado on top.
