  • 1 1/2 lbs boneless chicken breast, cut into 2-inch chunks
  • 1/2 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 tbsp olive oil
  • 1 tbsp kosher salt
  • 6 oz orange juice concentrate, no pulp
  • 3 tbsp brown sugar
  • 1 tsp balsamic vinegar
  • 3 tbsp ketchup

Method
 

  1. Whisk together the egg and milk in a shallow bowl.
  2. Mix the flour, panko breadcrumbs, and salt in a separate shallow dish.
  3. Dip each chicken piece into the egg mixture, then coat thoroughly with the flour and breadcrumb mixture.
  4. Heat the olive oil in a skillet over medium-high heat and sear the chicken chunks on all sides until golden brown.
  5. Transfer the browned chicken to the slow cooker.
  6. In a small bowl, whisk together the orange juice concentrate, brown sugar, balsamic vinegar, and ketchup.
  7. Pour the orange glaze mixture over the chicken in the slow cooker.
  8. Cover and cook on Low for 6 hours or on High for 3-4 hours, stirring gently halfway through to ensure even coating.

Notes

Use a gluten-free flour blend if needed. For extra heat, add a pinch of red pepper flakes to the sauce mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
