- Whisk together the egg and milk in a shallow bowl.
- Mix the flour, panko breadcrumbs, and salt in a separate shallow dish.
- Dip each chicken piece into the egg mixture, then coat thoroughly with the flour and breadcrumb mixture.
- Heat the olive oil in a skillet over medium-high heat and sear the chicken chunks on all sides until golden brown.
- Transfer the browned chicken to the slow cooker.
- In a small bowl, whisk together the orange juice concentrate, brown sugar, balsamic vinegar, and ketchup.
- Pour the orange glaze mixture over the chicken in the slow cooker.
- Cover and cook on Low for 6 hours or on High for 3-4 hours, stirring gently halfway through to ensure even coating.
Notes
Use a gluten-free flour blend if needed. For extra heat, add a pinch of red pepper flakes to the sauce mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
